Blueberry Granola

I love granola, but some of the stuff they sell in the grocery store is full of sugar and other fillers that are not really that good for you.

It is fun to make your own and experiment with the ingredients you use. Some times I add flax or sunflower seeds. I like to mix it up. When I use dried fruit, I do not bake it with the granola. For me, it has always burned. It is much better to add it in when the granola is pulled from the oven all warm and toasty.

You can use this granola with so many things. I love to eat this stuff straight up. You can put this in little individual Ziploc bags and take them with you to share at a sporting event. It is just as addictive as popcorn or chips. I also like to add it to my yogurt. It is fantastic in ice cream or frozen yogurt. It is so versatile you can enjoy it anytime.

Blueberry Granola

Ingredients:

Directions:

Preheat oven to 350 degrees.

Toss the oats, wheat germ, coconut and almonds together in a large bowl.

Whisk together the oil and maple syrup in a small bowl. Combine both mixtures until evenly coated.

Pour into a 9 x 13 inch sheet pan.

Bake stirring occasionally for 46 minutes. The granola should be golden brown but not burnt.

Remove granola from the oven and stir in the blueberries.

Allow to cool completely and store in an airtight container for up to a month, or in the freezer for up to 6 months.
