Ingredientes

  • 1 c. flour
  • 3/4 c. sugar
  • 1 1/4 teaspoon baking pwdr
  • 1/4 teaspoon salt
  • 1/3 c. lowfat milk
  • 1/4 c. shortening
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/2 c. fresh or possibly frzn blueberries
  • 2 Large eggs
  • 1 1/4 c. Ricotta cheese
  • 1/3 c. sugar
  • 1/4 teaspoon vanilla

Direcciones

  1. In small bowl, combine the flour, 3/4 c. sugar, baking pwdr and salt. Add in the lowfat milk, shortening, 1 egg and 1/2 tsp. vanilla. Beat with electric mixer on low speed till combined. Beat on medium speed for one minute. Pour batter into greased 9 x 9 x 2 inch baking pan. Sprinkle blueberries over batter. In medium mixing bowl, lightly beat the two Large eggs with a fork. Add in Ricotta cheese, the 1/3 c. sugar, and 1/4 tsp. vanilla. Beat till combined. Spoon Ricotta mix over blueberries proportionately. Bake at 350 degrees for 55 to 60 min till knife inserted in center comes out clean.
