Receta Bobotie
(Probably the most well-known and loved of the traditional Cape Malay savoury dishes and, besides a traditional South African braai (barbeque), usually the first dish that foreigners are introduced to. Almost always accompanied by “yellow rice” (rice cooked with a little turmeric and some raisins), and often also with pumpkin fritters.)

- Preheat the oven to 180°C (350°F).
- Grease a large oven-proof dish with butter or margarine, or spray with non-stick cooking spray.
- Heat oil in a heavy-bottomed frying pan.
- Sauté the chopped onions over medium heat until soft and transparent.
- Add all the spices and sauté for another minute.
- Add the meat, a little at a time, and cook until slightly browned. Add the salt and pepper (to taste).
- Using your hands squeeze the milk from the bread slices and add the mashed bread to the meat, as well as the lemon juice, apricot jam, chutney, raisins and grated apple. Mix thoroughly.
- Cook the mixture gently for about 30 minutes.
- Spoon the mixture into the greased oven-proof dish.
- Press the bay or lemon leaves into the mixture.
- Beat the eggs and the cup of milk.
- Pour over the meat.
- Bake for about 40 minutes, or until the top has set.
