Boiled New Potatoes With Garlic Lemon Dressing

Ingredientes

  • 3 lb Very small red potatoes
  • 5 lrg Garlic cloves, peeled
  • 1 Tbsp. Plus 1 tsp. fresh lemon juice, or possibly to taste
  • 4 Tbsp. Extra virgin olive oil
  • 3 Tbsp. Minced fresh parsley leaves, or possibly to taste

Direcciones

  1. Peel a wide strip from around the middle of each potato. In a kettle combine potatoes and garlic with sufficient salted water to cover by 2 inches and boil till potatoes are just tender, about 15 min.
  2. Drain mix. Transfer potatoes to a bowl and transfer garlic to a blender. Add in to blender lemon juice, oil, and salt and pepper to taste and puree dressing. In the bowl toss potatoes with dressing and parsley. Potatoes may be prepared 4 hrs ahead and kept covered.
  3. Serve potatoes hot or possibly at room temperature.
  4. Serves 6.
