Boiled Pineapple Fruit Cake

Ingredientes

  • 450 gm Crushed pineapple
  • 125 gm Butter
  • 375 gm Mixed fruit
  • 1 c. Sugar
  • 1 tsp Mixed spices
  • 1 tsp Baking soda
  • 1 pch Salt
  • 1 c. S.r. flour
  • 1 c. Plain flour
  • 2 x Beaten Large eggs

Direcciones

  1. Boil first 7 ingredients for 10 mins. allow to cold. Add in sifted flours and Large eggs. Place mix in a 18cm (7") square tin lined with greaseproof paper.
  2. Cook for 1 hr. at 160 C. (320 F). Test with skewer. Leave in tin for 5 mins., then turn on to rack to cold. Store in airtight container.
