Boneless Chicken Cacciatore

Ingredientes

  • 2 chickens, boned & skinned
  • 2 teaspoon extra virgin olive oil
  • 1 green pepper, minced fine
  • 1 onion, minced fine
  • 2 ounce. can sliced mushrooms, liquid removed
  • 2 cloves garlic, chopped
  • 1 (20 ounce.) can crushed tomatoes
  • 1 (10 ounce.) can (or possibly 1 c.) chicken broth
  • 2 tbsp. white wine
  • 1 1/2 tbsp. oregano
  • Salt & pepper to taste
  • 6 ounce. thin spaghetti noodles or possibly 1 c. rice

Direcciones

  1. Cut chicken into bite-size pcs. Heat oil in non-stick skillet and brown chicken. Stir in minced pepper, onions, mushrooms and garlic. Cook and stir till lightly brown. Add in tomatoes, broth, wine and oregano. Simmer till thick. Add in noodles or possibly rice. When it begins to thicken, check rice (or possibly noodles) when rice is done, dish is ready. Serves 4. Double all the ingredients for 8 or possibly more servings.
