Bopis with Coco Milk and Chili

I like this hot and creamy thick dish that I learned from my grandma. I gave it a little twist by adding coconut milk. Enjoy!

Ingredientes

  • 400 grams pork heart, diced
  • 400 grams pork lung, diced
  • 1 whole garlic
  • 1 large onion
  • 1/2 tsp paprika
  • 1 cup of water
  • 1 tsp annatto powder, diluted in warm water
  • 1 med radish diced
  • 1 med carrot, diced
  • 1 med red bell pepper, diced
  • 3 pieces red chili finger, chopped
  • 1/2 cup cane vinegar
  • 2 tbsp Canola oil
  • 1 tsp cornstarch
  • 1 cup coconut milk
  • salt and pepper to taste

Direcciones

  1. Rinse pork heart and lung thoroughly with salt
  2. Put in a pressure cooker and cook till tender. (15mins is ok)
  3. Chop them all finely into small cubes.
  4. In a deep pot, heat cooking oil and saute garlic, ginger, and onion
  5. Add the pork heart and lung, and season with the salt or soy sauce, pepper, Keep stirring.
  6. Cook for 5 minutes then add the water. Let it simmer to tender the vegetables.
  7. Add the annatto solution, chili, and bell peppers and stir.
  8. Pour in the coconut milk. Stir more and let it simmer.
  9. To thicken the sauce, add the cornstarch diluted in water.
  10. Stirring thoroughly until the juices lessen.
  11. Before serving, sprinkle with freshly sliced chili for garnish
