Ingredientes

  • 1 Tbsp. Lime juice
  • 2 x Ripe Roma tomatoes
  • 1/2 tsp Diced pickled chipotles
  • 2 dsh Warm sauce - (to 3)
  • 1/2 Tbsp. Brown sugar Salt to taste Freshly-grnd black pepper to taste
  • 4 x Shucked oysters
  • 4 x Shucked clams
  • 1 Tbsp. Minced cilantro
  • 1 Tbsp. Diced sweet red pepper
  • 1 Tbsp. Diced yellow pepper
  • 1 Tbsp. Diced poblano
  • 1 ounce Vodka
  • 1 tsp Extra virgin olive oil
  • 1 tsp Minced shallots
  • 1 tsp Minced canned chipotles

Direcciones

  1. Puree all of the spicy cocktail ingredients in a blender. In a medium bowl, spoon the cocktail sauce and vodka over the oysters, clams, peppers, and cilantro and mix gently. Chill.
  2. Whisk together ingredients for chipotle vinaigrette. Divide seafood mix between two large martini glasses and drizzle vinaigrette over each.
  3. Garnish with lime wedges, pearl onions and strips of serrano chile.
  4. This recipe yields 2 servings.
