%20that%20Chris%20gets%20so%20excited%20about%20something%20%20in%20the%20kitchen%20that%20he%20whips%20out%20his%20iPhone,%20snaps%20a%20quick%20photo,%20and%20Facebooks%20it.%20But%20when%20he%20does,%20I%20know%20it%E2%80%99s%20going%20to%20be%20an%20extra-special%20meal.%3C/p%3E%3Cp%3EThese%20are%20the%20meals%20that%20can%E2%80%99t%20go%20long%20without%20a%20mention%20here,%20for%20fear%20that%20I%E2%80%99m%20leaving%20you%20out%20of%20something%20really%20awesome.%20I%E2%80%99d%20feel%20really%20bad%20if%20I%20did,%20you%20see.%3C/p%3E%3Cp%3EMy%20somewhat%20long%20commute%20has%20led%20me%20to%20develop%20a%20cooking%20tradition,%20of%20sorts.%20Weeknights%20are%20now%20reserved%20for%20meals%20that%20take%20less%20than%201%20hour%20to%20make,%20from%20start%20to%20finish.%20I%20used%20to%20tackle%20arduous%20meals%20on%20any%20day,%20be%20it%20Friday%20with%20a%20nice%20glass%20of%20wine%20at%20my%20side,%20or%20Tuesday%20with%20silence%20in%20the%20house,%20other%20than%20the%20sounds%20of%20my%20knife%20tapping%20the%20board,%20piles%20of%20vegetables%20slain%20and%20piled%20high%20as%20mountains,%20and%20an%20oven%20heating%20up%20to%20350.%3C/p%3E%3Cp%3EThings%20are%20different%20now.%20Driving%202%20hours%20each%20day%20is%20enough%20to%20make%20you%20ten%20times%20more%20tired%20when%20you%20get%20home,%20no%20matter%20how%20stressful%20or%20boring%20your%20actual%20day%20in%20the%20office%20was.%20I%20have%20to%20fit%20in%20exercise%20too,%20(who%20am%20I%20kidding;%20this%20is%20once-a-week%20endeavor%20at%20best%20right%20now)%20writing%20here,%20and%20last%20but%20certainly%20not%20least,%20finishing%20the%20last%20season%20of%20Castle%20on%20Netflix.%3C/p%3E%3Cp%3EThis%20leaves%20the%20weekends%20for%20the%20hefty%20meals,%20the%20labors%20of%20love,%20the%20ones%20your%20gramma%20used%20to%20make%20every%20day%20like%20it%20was%20her%20job.%20Probably%20because%20it%20was%20her%20job,%20at%20least%20it%20was%20in%20my%20family.%20This%20is%20one%20of%20those%20meals:%20two%20hours%20from%20start%20to%20finish,%20and%20every%20minute%20is%20well%20worth%20it.%20And%20one%20more%20thing:%20the%20cost%20of%20groceries%20is,%20too.%3C/p%3E%3Cp%3EThis%20here,%20my%20friends,%20is%20a%20gigantic%20pot%20of%20goodness%20that%20will%20feed%20your%20whole%20block,%20or%20building,%20or%20the%20two%20of%20you%20for%20at%20least%20a%20week.%20And%20that%E2%80%99s%20the%20beauty%20%E2%80%93%20all%20that%20time%20is%20a%20bargain,%20when%20you%20sit%20right%20down%20and%20do%20the%20calculations.%20Check%20it%20out:%202%20hours%20of%20work%20+%2010%20servings%20of%20the%20most%20amazing%20jambalaya%20on%20the%20west%20coast%20=%2012%20minutes%20per%20serving.%20If%20you%20roll%20like%20I%20do,%20and%20choose%20to%20use%20this%20dish%20for%20another%20dinner%20and%20a%20couple%20of%20lunches,%20you%E2%80%99ve%20also%20cut%20some%20kitchen%20time%20outta%20the%20work%20week%20too,%20which%20some%20would%20consider%20a%20bonus.%3C/p%3E%3Cp%3ENow%20let%20me%20tell%20you%20about%20this%20slice%20of%20heaven%20before%20you.%20For%20starters,%20there%20is%20so%20much%20meat%20in%20this%20recipe%20that%20you%20won%E2%80%99t%20be%20able%20to%20take%20a%20bite%20without%20it,%20even%20if%20you%20tried.%20It%20is%20so%20spicy,%20in%20a%20good%20way,%20that%20you%20want%20to%20pack%20your%20bags,%20hop%20on%20a%20plane,%20and%20fly%20straight%20to%20New%20Orleans%20to%20eat%20everything%20Creole%20in%20sight%20because%20you%20just%20can%E2%80%99t%20get%20enough.%20It%E2%80%99s%20more%20than%20plenty%20to%20feed%20a%20crowd,%20if%20you%20want%20to%20share,%20but%20the%20leftovers%20heat%20perfectly,%20and%20I%20can%20attest%20to%20that%20wholeheartedly,%20as%20evidenced%20by%20the%20bowl%20I%20just%20emptied%204%20nights%20later.%3C/p%3E%3Cp%3EAnd%20probably%20(probably)%20most%20importantly%20%E2%80%93%20it%20will%20make%20you%20the%20most%20wonderful%20mammal%20in%20your%20house%20for%20at%20least%20a%20couple%20of%20hours%20afterwards.%20That%20is,%20until%20you%20start%20nagging%20about%20the%20dishes%E2%80%A6%3C/p%3E%3Cp%3EChicken%20&%20Sausage%20Jambalaya%3C/p%3E%3Cp%3EAdapted%20from%20Bon%20Appetit,%20March%202011;%20serves%20at%20least%2010%3C/p%3E%3Cp%3Etime%20commitment:%202%20hours,%20half%20of%20which%20is%20active%3C/p%3E%3Cp%3Eingredients%3C/p%3E%3Cp%3Einstructions%3C/p%3E%3Cp%3EPosition%20rack%20in%20bottom%20third%20of%20oven%20and%20preheat%20to%20350%20F.%20Cook%20bacon%20in%20very%20large%20pot%20over%20medium-high%20heat%20until%20brown%20but%20not%20yet%20crisp,%20stirring%20often,%208%20to%2010%20minutes.%20Add%20smoked%20sausage,%20andouille,%20and%20ham.%20Saut%C3%A9%20until%20meats%20start%20to%20brown%20in%20spots,%20about%2010%20minutes.%20Add%20onions,%20celery,%20and%20bell%20peppers.%20Cook%20until%20vegetables%20begin%20to%20soften,%20stirring%20occasionally,%2010%20to%2012%20minutes.%20Mix%20in%20chicken.%20Cook%20until%20outside%20of%20chicken%20turns%20white,%20stirring%20often,%
