.%3C/p%3E%3Cp%3E%22Inspired%20and%20influenced,%22%20I%20use%20these%20terms%20because%20despite%20my%20classical%20training,%20I%20improvise%20in%20the%20kitchen,%20using%20whatever%20ingredients%20I%20have%20on%20hand%20to%20create%20something%20unique%20and%20seasonal.%3C/p%3E%3Cp%3EImprovising%20in%20the%20kitchen%20is%20the%20basis%20of%20recipe-independence,%20I%20term%20I%20use%20often%20in%20this%20blog.%20I%20encourage%20experimentation%20and%20improvisation%20because%20so%20long%20as%20your%20cooking%20is%20bound%20by%20recipes,%20staying%20on-budget%20grocery%20shopping%20is%20a%20challenge.%3C/p%3E%3Cp%3EAll%20the%20produce,%20vegetables%20and%20fruit,%20I've%20used%20in%20my%20soups%20are%20in-season%20--%20in%20other%20words,%20they're%20abundant%20and%20thus%20priced%20well.%20Shopping%20and%20cooking%20seasonally%20is%20nature's%20way%20of%20keeping%20us%20healthy%20and%20on-budget%20at%20the%20grocery%20store.%3C/p%3E%3Cp%3EThe%20challenge%20once%20home%20is%20to%20prepare%20seasonal%20produce%20purchased%20so%20that%20interesting%20and%20appetizing%20meals%20result.%20One%20rule%20of%20thumb%20that%20anyone%20can%20implement:%20make%20your%20meals%20colorful%20by%20including%20lots%20of%20colorful%20produce.%3C/p%3E%3Cp%3EFor%20example,%20the%20beauty%20of%20Borscht%20is%20its%20magnificent%20reddish-purple%20color,%20due,%20of%20course,%20to%20the%20beets%20and%20the%20purple%20cabbage.%20I%20added%20a%20big%20blob%20of%20tinned%20tomato%20paste%20toward%20the%20end%20of%20the%20cooking%20to%20enrich%20the%20flavor;%20the%20red%20paste%20naturally%20enriched%20the%20color%20too.%3C/p%3E%3Cp%3EHalfway%20into%20the%20cooking,%20I%20also%20tossed%20one%20whole%20orange%20into%20the%20pot%20(pic%20above).%20Though%20not%20in%20season,%20the%20sweet-orange%20citrus%20flavor%20added%20zing%20in%20the%20same%20way%20lime%20added%20zing%20to%20Monday's%20soup.%20Orange%20and%20beets%20are%20great%20flavor%20pals%20and%20well,%20they're%20great%20color%20pals%20too!%3C/p%3E%3Cp%3ETraditionally,%20Borscht%20might%20include%20carrots,%20so%20though%20I've%20not%20included%20them%20in%20my%20variation,%20if%20you%20have%20them%20on%20hand%20try%20adding%20them.%20Carrots%20and%20orange%20and%20beets%20and%20purple%20cabbage%20all%20compliment%20one%20another%20in%20color%20and%20flavor.%3C/p%3E%3Cp%3EI've%20added%20beef%20to%20my%20soup.%20I%20had%20ground%20beef%20in%20my%20freezer%20and%20some%20Borscht%20recipes%20call%20for%20a%20beef-stock%20base.%20Because%20I%20intended%20eating%20the%20Borscht%20as%20a%20main%20dish,%20the%20addition%20of%20red%20meat%20created%20a%20substantial,%20highly%20nutritive,%20iron-rich%20bowl%20of%20soup%20so%20thick,%20it's%20almost%20a%20stew.%3C/p%3E%3Cp%3EBorscht%20with%20Beef%20&%20Orange%3C/p%3E%3Cp%3EInto%20a%20soup%20pot%20toss%20the%20following:%3C/p%3E%3Cp%3E1)%202%20medium-sized%20washed%20and%20scrubbed%20beets.%3C/p%3E%3Cp%3E2)%20One%20quarter%20of%20a%20large%20purple%20cabbage,%20washed%20and%20chopped.%3C/p%3E%3Cp%3E3)%201/2%20lb%20ground%20beef,%20you%20could%20use%20pork%20or%20chicken,%20if%20you%20wish.%20(The%20addition%20of%20meat%20is%20optional.)%3C/p%3E%3Cp%3E4)%20One%20large%20onion%20(optional).%3C/p%3E%3Cp%3E5)%20Several%20washed,%20scrapped,%20&%20chopped%20carrots%20(optional).%3C/p%3E%3Cp%3E6)%20If%20you%20have%20any%20dill%20or%20caraway%20seeds%20on%20hand,%20add%20a%20couple%20teaspoons.%3C/p%3E%3Cp%3E7)%20Cover%20ingredients%20with%20water,%20put%20lid%20on%20pot%20and%20simmer%20for%20about%2045%20mins%20or%20until%20beets%20are%20tender.%3C/p%3E%3Cp%3E8)%20At%20around%20the%20half-way%20mark,%20add%20one%20washed,%20scrubbed%20and%20chopped%20whole%20orange%20(skin%20included).%3C/p%3E%3Cp%3E9)%20Once%20the%20soup%20is%20cooked,%20remove%20the%20pieces%20of%20orange,%20and%20add%20a%20heaped%20tablespoon%20of%20tomato%20paste.%20Stir%20well,%20and%20then%20season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3ETo%20Serve:%20%20Ladle%20soup%20into%20a%20bowl.%20Top%20with%20a%20blob%20of%20sour%20cream%20or%20yogurt%20or%20sliced%20avocado%20or%20a%20mix%20of%20all%20three.%20Adhere%20several%20corn%20chips%20to%20the%20sour%20cream%20mix%20and%20sprinkle%20the%20lot%20with%20chopped%20chives%20and%20or%20the%20grated%20rind%20of%20an%20orange.%3C/p%3E){kind=link}
