Ingredientes

  • 1 x Cucumber large, peeled, halved,seeded, & diced
  • 1 1/2 lb Spinach leaves fresh, washed
  • 6 Tbsp. Frsh lemon juice
  • 1 1/2 lb Sorrel leaves, fresh
  • 3 Tbsp. Horseradish root, fresh Grated
  • 1 tsp Salt
  • 3/4 tsp Sugar
  • 1/2 lb Crab meat
  • 1 1/2 lb Poached sturgeon, in 1" pieces.
  • 1 1/2 lb Poached whitefish in 1" pieces.
  • 1 c. Scallions sliced
  • 1/4 c. Onion minced
  • 1 x Garlic clove chopped
  • 2 ounce Vodka
  • 1 1/2 quart Beer
  • 1 1/2 quart Kvas (see attached recipe)

Direcciones

  1. Boil 3 qts of water in a large pan. When boiling briskly add in the spinach and the sorrel. Cook uncovered at a brisk boil for 6-8 min. drain water off, wash vegetables in cool water, then puree in blender. cold to room temperature. Combine the other ingredients in bowl, except for the beer and vodka. When mixed well slowly add in the beer and the vodka stirring constantly. Refrigeratefor a minimum of 2 hrs before serving.
