Ingredientes

  • 1 lb Bow ties or possibly mostaccioli, or possibly other medium past Uncooked
  • 4 Tbsp. Low-sodium soy sauce
  • 2 Tbsp. Honey
  • 2 Tbsp. Lime juice
  • 3 tsp Dijon mustard with seeds
  • 1 lb Boneless chicken breasts, (without skin) Cut into 1/2-inch cubes
  • 1/2 c. Chicken broth, or possibly pasta cooking liq
  • 2 sm Red bell peppers, - cored, seeded and Thinly sliced lengthwise
  • 6 x Scallions, - trimmed & thinly Freshly grnd pepper
  • 4 Tbsp. Minced fresh parsley

Direcciones

  1. Stir the soy sauce, honey, lime juice and mustard in a small bowl till the honey is dissolved. Add in the chicken pcs and turn till coated with the marinade. Chill for 30 min.
  2. Transfer the chicken and marinade to a large, non-stick skillet. Cook over medium heat till chicken is cooked through, about 4 min.
  3. Remove from the heat and pour in the chicken broth.
  4. Prepare pasta according to package directions. Drain thoroughly in a colander. Return the pasta to the pot, add in the contents of the skillet, the red peppers and the scallions. Heat to simmering over low heat. Toss the pasta once or possibly twice, add in the pepper to taste and divide among serving bowls. Sprinkle each serving with minced fresh parsley.
  5. If you don't have chicken broth, ladle off and reserve 1/2 c. pasta cooking liquid just before draining the pasta.
