  • 1/4 c. Cassis (blackcurrent liqueur)

  1. Hi All. This is a really refreshing summer dessert PUT BOYSENBERRIES IN A POT WITH THE WATER HEAT GENTLY 'TIL BERRIES ARE MELTED, THEN SIMMER FOR 10 Minutes Till THE FRUIT IS VERY SOFT. Add in SUGAR & SIMMER AGAIN 'TIL DISSOLVED.
  2. STRAIN THROUGH FINE SIEVE, PRESSING WITH A WOODEN SPOON (TO GET AS MUCH JUICE AS POSSIBLE). Add in CASSIS & TASTE FOR SWEETNESS Add in MORE SUGAR If you like. REHEAT JUICE 'TIL ALMOST BOILING. SOFTEN GELATINE IN 1/2 C. Cool WATER & STIR INTO JUICES. STIR Till DISSOLVED. POUR INTO LARGE BOWL OF JELLY MOULD. SET IN A Cool PLACE. UNMOULD JUST BEFORE SERVING. THIS IS A VERY RICH FLAVOURED JELLY SO SMALL HELPINGS ARE ALL Which IS NEEDED. 8 SERVINGS.
