Ingredientes

  • 1 1/2 c. Flour- divided
  • 1 1/4 c. Boysenberry , fresh
  • 1 c. Brown sugar
  • 2 tsp Baking pwdr
  • 1 tsp Cinnamon
  • 1/4 tsp Salt
  • 1 x Egg, beaten
  • 1/3 c. Oil
  • 1/2 c. Skim lowfat milk
  • 1/4 c. Nuts, minced
  • 2 Tbsp. Brown sugar
  • 1/2 Tbsp. Cinnamon
  • 1/3 c. Powdered sugar
  • 2 tsp Lemon juice

Direcciones

  1. Preheat oven to 350. Dust Boysenberries with 2 Tablespoons flour, set aside. Mix remaining flour, sugar, baking pwdr, cinnamon and salt. Mix egg & oil; add in flour mix alternately with lowfat milk. Mix in Boysenberries. Fill standard size greased muffin c. (or possibly paper ones) 2/3 full. Combine nuts, brown sugar & remaining cinnamon; sprinkle over muffins and bake 20-25 minutes. Stir together powdered sugar & lemon juice. When muffins are slightly cooled drizzle sugar/lemon mix on muffins.
