%3C/p%3E%3Cp%3Ethat%20I%20lost%20count%20of%20how%20many%20I%E2%80%99ve%20peeled,%20chopped%20and%20steamed.%20Then%20the%20day%3C/p%3E%3Cp%3Ebefore%20Halloween,%20I%20took%20the%20girls%20to%20get%20our%20pumpkins%20for%20carving.%20While%20I%20was%3C/p%3E%3Cp%3Eat%20the%20stand,%20I%20saw%20such%20a%20multitude%20of%20tan%20pumpkins%20all%20around%20that%20I%20bought%3C/p%3E%3Cp%3Eone.%20I%20figured,%20at%20the%20time,%20that%20it%20was%20a%20good%20size%20and%20I%20should%20get%20a%20fair%3C/p%3E%3Cp%3Eamount%20of%20pumpkin%20puree%20from%20it.%20I%20sorely%20underestimated%20this%20pumpkin.%3C/p%3E%3Cp%3EThis%3C/p%3E%3Cp%3Esucker%20was%20HUGE!%20It%20took%20me%20about%20an%20hour%20and%20a%20half%20to%20peel%20and%20chop%20it%20all.%3C/p%3E%3Cp%3EThen,%20as%20I%20had%20to%20steam%20it%20in%20batches,%20it%20took%20a%20few%20more%20hours%20to%20get%20it%20all%3C/p%3E%3Cp%3Esteamed%20and%20then%20pureed.%20*whew*%20After%20it%20was%20all%20said%20and%20done,%20I%20ended%20up%20with%3C/p%3E%3Cp%3E6%20cups%20in%20the%20fridge%20and%206%20%C2%BC%20cups%20frozen%20(in%20%C2%BE%20cup%20increments).%20Just%20over%2012%3C/p%3E%3Cp%3Ecups%20of%20puree%20from%20one%20pumpkin!%20And%20then%20I%E2%80%99ve%20got%2015%20or%20so%20bags%20of%20pumpkin%3C/p%3E%3Cp%3Ealready%20frozen%20most%20of%20which%20are%20%C2%BE%20cup,%20with%20some%20being%20%C2%BD%20cup.%3C/p%3E%3Cp%3ENeedless%20to%20say,%20we%E2%80%99ll%20be%20having%20baked%20goods%20with%20not-canned%3C/p%3E%3Cp%3Epumpkin%20throughout%20the%20year%20next%20year.%20J%3C/p%3E%3Cp%3EAnyway,%20now%20that%20we%E2%80%99ve%20acknowledged%20my%20crazy%20pumpkin%20spree,%3C/p%3E%3Cp%3Elet%E2%80%99s%20move%20on%20to%20our%20latest%20pumpkin%20endeavor.%3C/p%3E%3Cp%3EWe%20thought%20it%20would%20be%20fun%20to%20make%20a%20pumpkin%20spice%20cookie.%3C/p%3E%3Cp%3ESo%20we%20did.%3C/p%3E%3Cp%3EMy%20helpers....they%20sure%20are%20getting%20big.%3C/p%3E%3Cp%3EHowever,%20I%E2%80%99m%20not%20too%20inclined%20to%20share%20the%20recipe%20yet%20since%20it%20still%3C/p%3E%3Cp%3Eneeds%20some%20work.%20But%20we%20did%20use%20the%20usual%20suspects:%20flour,%20salt,%20sugar,%20butter,%20baking%20soda,%20spices,%20all%20that%20jazz.%20We%20used%20some%20of%20the%20pureed%20pumpkin%20and%20also%20added%20some%20real-deal%20true-blue%20Canadian%20maple%20syrup.%20Mmmmmmmm%20(This%20is%20the%20only%20kind%20of%20syrup%20that%20I%20use%20on%20pancakes%20and%20waffles%20and%20everything...everyone%20else%20under%20this%20roof%20prefers%20the%20fake%20stuff.%20blech)%3C/p%3E%3Cp%3ESomebody%20snuck%20a%20finger%20as%20the%20picture%20was%20snapped.%20:)%3C/p%3E%3Cp%3EThey%20held%20their%20shape%20ok%20enough%20on%20the%20baking%20sheet.%20And%20they%20did%20turn%20out%20edible%20(always%20a%20plus)%20and%20cookie%20shaped%3C/p%3E%3Cp%3E(also%20a%20good%20thing)%20but%20I%20just%20don%E2%80%99t%20think%20of%20this%20as%20a%20true%20success.%3C/p%3E%3Cp%3EPhoto-bombed%20again%20by%20somebody's%20finger.%20:)%3C/p%3E%3Cp%3EThey%20were%3C/p%3E%3Cp%3Ethin%20and%20really%20chewy.%20L%3C/p%3E%3Cp%3EI%E2%80%99ll%20just%20have%20to%20try%20again.%20J%3C/p%3E%3Cp%3EIf%20I%20can%20perfect%20this%20recipe,%20I%E2%80%99d%20love%20to%20add%20it%20to%20the%3C/p%3E%3Cp%3Eupcoming%20%E2%80%9925%20Days%20of%20Christmas%20in%20Cookies%E2%80%99.%20I%E2%80%99ve%20already%20started%20planning%20out%3C/p%3E%3Cp%3Emy%20days%20and%20Kyleigh%20and%20I%20are%20so%20excited!%20So%20far%20I%E2%80%99m%20planning%20on%20doing%20classics%3C/p%3E%3Cp%3Ealong%20with%20new%20cookies%20that%20I%E2%80%99ve%20never%20done%20before%20but%20do%20have%20recipes.%20It%E2%80%99s%3C/p%3E%3Cp%3Egoing%20to%20be%20so%20much%20fun!%20J%3C/p%3E%3Cp%3ESo%20you%E2%80%99ve%20got%20a%20pumpkin.%20But%20how%20do%20you%20get%20it%20ready%20for%3C/p%3E%3Cp%3Ebaking?%3C/p%3E%3Cp%3EFirst%20thing%20you%E2%80%99ve%20got%20to%20do%20is%20peel%20it.%20Now,%20I%E2%80%99ve%20never%20had%3C/p%3E%3Cp%3Ea%20whole%20lot%20of%20luck%20using%20a%20veggie%20peeler%20%E2%80%93%20the%20skin%20is%20just%20too%20tough.%20First,%3C/p%3E%3Cp%3EI%E2%80%99ll%20cut%20the%20pumpkin%20in%20half%20and%20then%20cut%20into%20large%20slices.%20Then%20I%20cut%20out%20the%3C/p%3E%3Cp%3Egooey%20insides%20on%20each%20slice%20and%20then%20cut%20off%20the%20peel.%3C/p%3E%3Cp%3ENext,%20after%20the%20whole%20pumpkin%20has%20the%20peel%20and%20insides%20cut%3C/p%3E%3Cp%3Eoff,%20chop%20it%20up%20into%20cubes%20that%20are%20fairly%20close%20in%20size.%20(The%20uniformity%20will%3C/p%3E%3Cp%3Eensure%20even%20cooking.)%3C/p%3E%3Cp%3EThen%20toss%20all%20your%20cubes%20into%20a%20steamer%20basket.%20Or,%20if%20you%3C/p%3E%3Cp%3Eare%20like%20me%20and%20want%20to%20steam%20up%20large%20batches%20at%20once,%20create%20a%20large%20make-shift%3C/p%3E%3Cp%3Ebatches%20in%20a%20food%20processor%20or%20in%20a%20blender.%3C/p%3E%3Cp%3EAnd%20voila!%20Pureed%20pumpkin%20ready%20for%20any%20baking%20or%20cooking%3C/p%3E%3Cp%3Eproject!%20J%3C/p%3E%3Cp%3EBack%20when%20I%20first%20started%20this%20lil%20blog%2
