Receta Braised Chicken & Sausage with Kale & Spinach

Braised chicken & sausage ready for the table.

Vegetables and spices: potatoes, onion, garlic, garbanzo beans, Italian sausage seasoning & Italian herbs.
Protein components: skinned chicken thighs and chicken sausage.
Greens: 10 oz cleaned chopped Kale & 3 oz Baby Spinach.
Dredge chicken in flour & season with salt/pepper.
Brown in medium highskillet with oil/Ghee for about four minutes per side or until golden.
Any cut of chicken will work but if using breasts don't over cook or they will dry out.
Remove chicken from pan and saute onions.
Add garlic; saute until fragrent, about a minute.
Deglaze pan with white wine & scrape fond from pan.
Add tomatoes, stock, herbs and spices. Bring to simmer.
Add Kale. Cover & simmer for five minutes.
Add chickne back to pan.
Add sausage.
Cover and braise in oven for 1 hour.
Add potatoes, garbanzo beans & baby spinach.
Cover & braise for 20 more minutes or until potatoes are tender.
Stir in 1 Tbs red wine vinegar. It perks up the flavor nicely with the addition of acid.
Serve with a salad, crusty bread and a medium body red wine.
