Receta Braised Chinese Lettuce And Chestnuts

- Soak dry scallops.
- Shell chestnuts. Cut Chinese lettuce in 2-inch cubes and blanch. Shred scallops.
- Heat oil. Add in lettuce and stir-fry to coat with oil.
- Add in stock, salt, scallops and chestnuts. Bring to a boil; then simmer, covered, till chestnuts are soft (about 20 min).
- Blend cornstarch and cool water to a paste; then stir in to thicken.
- Serve warm in a deep bowl. VARIATION: In step 3, add in with the lettuce, dry mushrooms (soaked), sliced.
