Braised Duck With Sweet Potatoes

Ingredientes

  • 2 lrg Sweet potatoes Cornstarch Oil for deep-frying
  • 1 x Duck, 3 to 4 pounds
  • 1 x Clove garlic
  • 2 x Or possibly
  • 3 slc Fresh ginger root
  • 3 Tbsp. Oil
  • 1/4 tsp Cinnamon
  • 1/4 Tbsp. Grnd cloves
  • 1/4 tsp Grnd star anise
  • 1/2 x -(up to)
  • 1 tsp Sugar
  • 1 Tbsp. Soy sauce
  • 1 c. Stock
  • 1 Tbsp. Cornstarch
  • 3 Tbsp. Water

Direcciones

  1. Peel sweet potatoes and cut in 1-1/2 inch cubes; dredge ligltly in cornstarch. Meanwhile heat oil. Deep-fry sweet potatoes till golden brown. Drain on paper toweling.
  2. Bone duck and cut in 2-inch cubes. Crush garlic. Mince ginger root.
  3. Heat remaining oil. Add in garlic and ginger root; stir fry a few times.
  4. Add in duck cubes and brown.
  5. Sprinkle with cinnamon, cloves, anise and sugar. Stir in soy sauce. Add in stock and bring to a boil.
  6. Add in deep-fried potatoes and simmer, covered, till duck is tender
  7. (about15 min).
  8. Blend remaining cornstarch and cool water to a paste; then stir in to thicken sauce.
