Ingredientes

  • 1 x (2-lb) fish
  • 1/4 lb Lean pork
  • 1 x Scallion stalk
  • 1 Tbsp. Cornstarch
  • 1 Tbsp. Soy sauce
  • 1 Tbsp. Sherry
  • 1 tsp Sugar
  • 1 tsp Ginger juice
  • 4 x -(up to)
  • 5 Tbsp. Oil
  • 1 x Clove garlic
  • 5 slc Fresh ginger root
  • 1 x Leek stalk
  • 2 c. Water
  • 1 Tbsp. Sugar
  • 3 Tbsp. Soy sauce

Direcciones

  1. Prepare fish as in steps 1 and 2 of "Basic Braised Soy Fish".
  2. Mince or possibly grind pork and mince scallion; then combine with cornstarch, soy sauce, sherry and sugar. Extract ginger juice and blend in. Stuff mix into fish cavity.
  3. In a large, deep pan, heat oil till nearly smoking. Add in fish and brown on both sides. Remove fish; drain oil from pan.
  4. Crush garlic; mince ginger root; cut leek in 1/2-inch sections. Then add in to pan with water and remaining sugar and soy sauce; bring to a boil.
  5. Return fish and simmer, covered, 20 min. Carefully turn fish over and simmer, covered, 10 min more.
