Braised Fragrant Pork

Ingredientes

  • 1 piece tangerine peel
  • 2 lb Pork
  • 2 x Scallion stalks
  • 2 x Or possibly
  • 3 slc Fresh ginger root
  • 2 1/2 Tbsp. Oil
  • 1 c. Sherry
  • 1/2 c. Soy sauce
  • 1/2 tsp Anise pwdr
  • 1/2 stk cinnamon
  • 3 x -(up to)
  • 5 x Cloves
  • 1 tsp Salt
  • 1 c. Water

Direcciones

  1. Soak tangerine peel.
  2. Cut pork in 1-inch cubes. Slice scallion and ginger root.
  3. Heat oil to smoking in a heavy pan and brown pork quickly on all sides.
  4. Add in sherry, soy sauce, anise pwdr, cinnamon, cloves, salt and water. Bring to a boil.
  5. Add in tangerine peel, sliced scallion and ginger root. Then simmer, covered, till tender (about 1-1/2 hrs), turning meat occasionally.
  6. NOTE: If water evaporates, add in a small quantity of boiling water to prevent burning.
