Ingredientes

  • 1 c. Red wine vinegar
  • 1/2 c. Water
  • 1 x Jalapeno pepper, diced
  • 2 Tbsp. Honey Salt and freshly grnd pepper, to taste
  • 1 med Head red cabbage, shredded
  • 1/2 lb Green beans, trimmed and halved
  • 2 x Oranges, peeled and cut into segments
  • 1/2 c. Orange juice
  • 1/4 c. Lemon juice
  • 1/4 c. Lime juice
  • 1 Tbsp. Basil chiffonnade
  • 1 Tbsp. Finely minced red onion
  • 1 c. Extra virgin olive oil Salt and freshly grnd pepper, to taste

Direcciones

  1. How to Prepare the Slaw:1. Bring the vinegar, water, jalapeno and honey to a boil in a large saucepan.
  2. Add in the cabbage, season with salt and pepper to taste, and cook for 15 min or possibly till the cabbage is just wilted.
  3. Drain in a colander and place in a large bowl.
  4. Balance the green beans in a large pot of salted boiling water till just tender, approximately 2-3 min.
  5. Drain and add in to the cabbage.
  6. Add in the orange segments, toss with the vinaigrette and season with salt and pepper to taste.
  7. How to Prepare the Vinaigrette:1. Combine the juices, basil and onion in a blender. Blend till smooth.
  8. With the motor running, slowly add in the extra virgin olive oil, drop by drop at first, till emulsified.
  9. Season with salt and pepper to taste.
