Braised Red Cabbage With Cranberries

Ingredientes

  • Cooking spray
  • 1 med Yellow onion, minced
  • 2 x Cloves garlic, chopped
  • 1 lb Red cabbage, sliced thin
  • 1 c. Cranberries
  • 1 Tbsp. Red wine vinegar
  • 2 tsp Honey
  • 1/2 c. Orange juice
  • 1 med Bay leaf
  • 1/4 tsp Ginger
  • 1/8 tsp Grnd cloves

Direcciones

  1. In a heavy skillet, heat the cooking spray over moderate heat; add in the onion and garlic and cook, uncovered, till soft-about 5 min. Fold in the cabbage, cover and cook till the cabbage is barely wilted-about 10 min.
  2. Add in the cranberries, vinegar, honey, orange juice, bay leaf, ginger, and cloves; cover and continue cooking till almost all the liquid has evaporated and the cabbage has wilted-about 15 min. If the cabbage has wilted, but there is still considerable liquid left, remove the cover and raise the heat to high to boil down the liquid. Remove and throw away the bay leaf.
