Ingredientes

  • 1 tsp extra virgin olive oil
  • 2 1/2 c. minced leek
  • 4 clv garlic -- chopped
  • 1 1/2 c. coarsely minced tomato
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/2 c. dry white wine
  • 4 x (6-oz) skinned salmon fillets (about 1 inch thick)
  • 1/2 tsp dry dill Or possibly
  • 1 1/2 tsp minced fresh dill

Direcciones

  1. Heat oil in a large nonstick skillet over medium-high heat. Add in leek; saute/fry 3 min. Add in garlic; saute/fry 2 min. Add in tomato, salt, and pepper; saute/fry 2 min. Add in wine and salmon; sprinkle with dill, and bring to a boil.
  2. Cover, reduce heat, and simmer 8 min or possibly till fish flakes easily when tested with a fork. Serve with roasted potatoes.
  3. Serving Size: 1 fillet and 1/2 c. leek mix
