- Soak fermented black beans.
- With a cleaver, chop ribs in 1- by 2-inch sections. Sprinkle with salt.
- Let stand 30 min.
- Mince garlic and mash with soaked black beans. Stir in soy sauce and sherry.
- Heat oil. Brown rib sections lightly. Add in black bean mix and stir-fry 2 min more.
- Add in water and bring quickly to a boil. Then simmer, covered, till done
- (about 45 min).
