Braised Soy Fish With Oyster Sauce

Ingredientes

  • 1 x (2-lb) fish
  • 4 x Scallion stalks
  • 1 x Or possibly
  • 2 slc Fresh ginger root
  • 1 x Clove garlic
  • 1 c. Stock
  • 1 Tbsp. Oil
  • 2 Tbsp. Oyster sauce
  • 2 Tbsp. Soy sauce
  • 1 tsp Sugar
  • 3 dsh Tabasco sauce, more or possibly less

Direcciones

  1. Prepare fish as in steps 1, 2 and 4 of "Basic Braised Soy Fish" (see recipe). Turn off heat and leave fish in pan.
  2. Cut scallions in 1/2-inch sections. Mince ginger root and garlic.
  3. Meanwhile heat stock separately.
  4. In a skillet, heat remaining oil. Add in scallion, ginger mot and garlic, and stir-fry a few times. Add in oyster sauce, soy sauce, sugar and Tabasco Sauce. Cook, stirring, 1 minute. Then pour over fish.
  5. Add in heated stock to fish and simmer, covered, till done (about 15 min), turning fish once.
