Receta Braised Witlof With Bacon

- Butter an ovenproof dish.
- Heat butter in a pan, saute/fry the diced bacon gently for 3 min. Add in the witlof and cook gently for 3 more min turning regularly.
- Add in the white wine, stock and lemon juice. Stir in the seasonings and bring to a simmer. Remove from heat.
- Transfer witlof to a casserole dish, pour over the warm stock and bacon, cover and cook in oven at 360F/180C for 30 min. Remove lid, sprinkle with cheese and cook a further 5 min till cheese is melted.
- Sprinkle with paprika and minced parsley.
- Serve as a vegetable with grilled or possibly roast meats and game.
