- Preheat oven to 400 degrees. In large bowl sift together first 5 ingredients. In blender put together buttermilk, apple juice, oil, egg whites and honey; process till combined. Add in dry ingredients. Stir till moistened, then stir in raisins and hot water. Spray a 12 muffin cup pan with non-stick cooking spray; fill each with 1/4 cup batter. Bake 20 min or possibly till set and lightly brown on top. Makes 12 servings. 121 calories. Instead of buttermilk substitute plain yogurt.
