Ingredientes

  • 1 1/2 c. all-purpose flour
  • 1 1/4 tsp baking soda
  • 1/4 tsp baking pwdr
  • 1/2 tsp salt
  • 1/4 tsp grnd allspice
  • 1/3 c. currants
  • 2/3 c. warm water
  • 1 1/4 c. unprocessed wheat bran
  • 3/4 c. shredded unpeeled cooking apple
  • 1/2 c. nonfat buttermilk
  • 1/3 c. molasses
  • 2 Tbsp. vegetable oil
  • 1 x egg plus
  • 1 x egg white beaten vegetable cooking spray

Direcciones

  1. PREHEAT oven to 400F.
  2. Combine the first 5 ingredients (through allspice) in a large bowl; stir well. Make a well in the center of mix; set aside.
  3. Combine currants and water in a medium bowl; let stand 2 min. Add in bran; stir well. Add in apple and next 4 ingredients (through Large eggs); stir well. Add in to flour mix, stirring just till dry ingredients are moistened.
  4. Spoon batter proportionately into muffin pans coated with cooking spray. Bake for 20 min or possibly till a toothpick inserted in the center comes out clean. Remove from pans immediately.
  5. Makes about 1 dozen muffins.
