Secret Recipe Club Assignment- Melissa's Cuisine
Melissa is a busy wife, mom and an office manager of a fast growing counseling agency in West Michigan. Melissa spends most of her free time in the kitchen, making recipes that she and her husband grew up on. Melissa reads cookbooks the same way that I do, from cover to cover, the way most people read a novel! I decided to make Melissa's recipe for Bran Muffins, but I must say she had many great recipes to try. With zucchini plentiful right now, Melissa's recipe for Chocolate Zucchini Muffins looks delicious and with football season almost here I am always looking for a good recipe for beer bread like her recipe for Bacon Cheddar Beer Bread. Bran Muffins
Makes 28
- 3 cups bran flake cereal, (I used Trader Joe's)
- 1/2 cup shortening
- 1 cup boiling water
- 2 eggs
- 2-1/2 cups flour
- 1-1/2 cups sugar
- 1/2 t salt
- 2 1/2 t baking soda
- 2 cups buttermilk
- 1 cup chopped prunes, (in place of raisins)
Mix together bran flakes, shortening, and water.
Add sugar and egg. Stir until mixed.
Add flour, baking soda, salt, buttermilk and prunes.
Stir just until combined.
Pour batter into greased muffin tins.
Bake at 350 for 22-25 minutes.
Remove from oven and cool on wire rack
Serve with honey if desired.
