Bran Muffins with a Crunchy Top
Bran Muffins, I love these! One muffin with 1 t. sugar-free jelly along with a banana and you have a prefect start to your day! And all for under 300 calories!! Can't go wrong with that!
- 1-3/4 cups Bran Flakes Cereal
- 1 cup buttermilk
- 1 egg, beaten
- 3 T vegetable oil
- 1-1/4 cups flour
- 1/3 cup brown sugar
- 1 T baking powder
- 1 t ground cinnamon
- 1/2 cup golden raisins
- Topping:
- 3/4 cup Bran Flakes cereal. crushed to 1/3 cup
- 2 T packed brown sugar
- 1 T butter, melted
To prepare topping: Combine cereal, sugar, and melted butter. Mix well. Divide evenly over muffins.
To prepare muffins: Preheat oven to 400º Grease or paper-line 10-12 muffin cups
Combine cereal, buttermilk, egg and oil in bowl. Let stand for 10 mins; stir to break up cereal.
Combine flour, sugar, baking powder and cinnamon in separate bowl.
Add cereal mixture all at once to flour mixture, stirring just until combined. (Batter will be thick)
Fold in raisins. Divide batter between 10-12 muffin cups.
Sprinkle with topping. Bake 20-25 mins. or until toothpick inserted in center comes out clean.
**1 T lemon juice or vinegar and enough milk to equal 1 cup may be substituted for the buttermilk.
** Add a small amount of water to empty muffin cups.
