Bran Muffins With Cream Cheese Filling

Ingredientes

  • 1/2 c. Bran cereal
  • 1 c. Lowfat milk
  • 1/4 c. Oil
  • 1 x Egg
  • 1 1/4 c. Flour
  • 1/2 c. Sugar
  • 1 Tbsp. Baking pwdr
  • 1/2 tsp Salt
  • 1/2 c. Raisins
  • 4 ounce Cream cheese, softened
  • 2 Tbsp. Sugar
  • 1 x Egg

Direcciones

  1. Preheat oven to 375F. Spray a 12 c. muffin pan with non-stick spray and lightly dust with flour. In a medium bowl, combine cereal and lowfat milk; let stand 2 min. Add in oil and egg; mix well. In a separate bowl, combine flour, sugar, baking pwdr and salt. Add in to cereal mix all at once and stir till just moistened. Mix in raisins. Spoon batter into muffin c., filling each c. 2/3rds full.
  2. To make filling, combine cream cheese, sugar and egg. Mix till well-blended. Spoon 1 rounded Tbsp. on top of each muffin.
  3. Bake 25 min or possibly till muffin springs back when lightly touched.
