- Fill a large bowl with ice cubes. Set aside.
- Combine egg yolks and sugar in another bowl and beat till well blended.
- In a saucepan combine cream and lowfat milk and bring to a boil. Remove pan from heat and gradually add in 1/2 c. of cream mix to the sugar and yolks, whisking constantly. Slowly whisk the egg mix back into the remaining cream mix in saucepan and heat over medium heat till thickened. Don't boil.
- Remove from heat and add in brandy and salt. Strain mix into a small bowl. Place it into the large bowl with the ice cubes to cold quickly. Chill. Serve chilled. Makes 2 c..
