%20to%20work%20in%20Russia%20for%203%20weeks.%20And%20suddenly%20KA-BOOOOM%20it%E2%80%99s%20cucumber%20hell.%3C/p%3E%3Cp%3EYou%20know%20that%20neighbor%20you%20have%20or%20have%20heard%20about?%20The%20ones%20that%20leave%20zucchini%20on%20your%20doorstep%20and%20run%20away?%20Well,%20that%20was%20me!%20The%20cucumber%20monster.%3C/p%3E%3Cp%3EEven%20with%20giving%20them%20away%20there%20were%20tons%20around.%20Now,%20the%20Dear%20One%20does%20not%20eat%20anything%20pickled%20%E2%80%A6%20sigh.%20But%20I%20DO%20and%20he%20was%20away%20and%20I%20was%20bored%20and%20I%20needed%20something%20to%20do%20to%20entertain%20myself.%20(lotso%20justifying%20going%E2%80%99%20on%20here)%3C/p%3E%3Cp%3EAnd%20then%20I%20came%20across%20this%20recipe%20for%20Bread%20&%20Butter%20pickles%20over%20at%20Recipe%20Girl%20and%20realized%20I%20had%20this%20great%20cookbook%20Cooking%20Light%E2%80%99s%20Cooking%20Through%20the%20Seasons%20on%20my%20bookshelves.%20Ta%20da!%20I%20was%20set!%3C/p%3E%3Cp%3EWhat%20I%20did%20do,%20though,%20being%20the%20only%20pickle%20person%20on%20the%20premises%20was%20%E2%80%98can%E2%80%99%20them.%20Something%20I%20have%20wanted%20to%20try%20for%20quite%20some%20time,%20and%20there%20will%20be%20more%20of%20this%20following.%20My%20mother%20now%20refers%20to%20me%20as%20%E2%80%98my%20daughter,%20Laura%20Ingalls%E2%80%99.%3C/p%3E%3Cp%3EI%20was%20a%20bit%20nervous%20about%20this%20canning%20process%20at%20first,%20but%20once%20I%20started%20it%20was%20off%20to%20the%20races.%20I%20didn%E2%80%99t%20can%20much%20this%20year.%20I%20much%20happier%20with%20things%20in%20the%20chest%20freezer%20we%20have.%20But%20now%20I%E2%80%99ve%20started%20this%20there%20are%20a%20host%20of%20things%20I%20have%20ready%20to%20try%20for%20next%20year!%3C/p%3E%3Cp%3ETo%20very%20loosely%20quote%20Bob%20Wiley%20(and%20if%20you%20don%E2%80%99t%20know%20the%20character%20or%20the%20movie%20%E2%80%A6%20sigh)%20%E2%80%93%20I%E2%80%99m%20canning!%20I%E2%80%99m%20canning!%20I%E2%80%99m%20canning!%20I%20can!%20I%E2%80%99m%20a%20canner!%20I%20can!%3C/p%3E%3Cp%3EI%20was%20surprised%20at%20how%20easy%20the%20pickle%20part%20of%20this%20project%20was.%20For%20some%20reason%20I%20had%20an%20entire%20saga%20that%20went%20on%20when%20you%20pickle%20something.%3C/p%3E%3Cp%3ECombine%20cucumbers%20and%20salt%20in%20a%20large,%20shallow%20bowl;%20cover%20and%20chill%201%201/2%20hours.%20Move%20cucumbers%20into%20a%20colander%20and%20rinse%20thoroughly%20under%20cold%20water.%20Drain%20well,%20and%20return%20cucumbers%20to%20bowl.%20Add%20onion%20to%20the%20bowl.%3C/p%3E%3Cp%3ENOTE:%20When%20you%E2%80%99re%20slicing%20the%20cucumbers,%20don%E2%80%99t%20slice%20them%20too%20thinly.%20You%20want%20them%20to%20have%20a%20bit%20of%20substance%20to%20them%20so%20they%E2%80%99ll%20hold%20up%20in%20the%20pickling%20liquid.%3C/p%3E%3Cp%3ECombine%20sugar%20and%20remaining%20ingredients%20in%20a%20medium%20saucepan;%20bring%20to%20a%20simmer%20over%20medium%20heat,%20stirring%20until%20sugar%20dissolves.%20Pour%20hot%20vinegar%20mixture%20over%20cucumber%20mixture;%20let%20stand%20at%20room%20temperature%201%20hour.%20Cover%20and%20refrigerate%2024%20hours.%20Store%20in%20an%20airtight%20container%20in%20refrigerator%20up%20to%202%20weeks%20or%20give%20them%20a%20hot%20water%20bath%20to%20seal%20the%20jars%20and%20they%E2%80%99ll%20store%20forever%20%E2%80%A6%20for%20a%20very%20long%20time%20%E2%80%A6%20until%20you%E2%80%99re%20ready%20to%20use%20them.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
