Bread And Butter Pudding With Rum And Bananas

Ingredientes

  • 1/2 x French stick
  • 5 x Large eggs
  • 2 x Egg yolks
  • 175 gm Caster sugar
  • 300 ml Lowfat milk
  • 300 ml Double cream
  • 1 x Vanilla pod
  • 1 x Banana
  • 100 ml Rum
  • 50 gm Butter, melted
  • 200 ml Raspberry sauce

Direcciones

  1. Chop the banana into pcs and place into an ovenproof dish.
  2. Sprinkle over half of the rum.
  3. Slice bread into 1cm thick slices, dip into butter and layer into dish. Hot cream, lowfat milk and vanilla. Whisk Large eggs and sugar, add in remaining rum.
  4. Pour on liquid, wash and strain. Pour mix over bread in dish.
  5. Bake in bain marie for 30 min at 200C/325F.
  6. When golden brown and set, remove from water and cold completely. When cool cut into portions with a cutter.
  7. To serve, dish with icing sugar and place in the centre of the plate.
  8. Pour around the raspberry sauce.
