%20love.%20No,%20Michael%20isn't%20in%20jeopardy%20of%20loosing%20out%20at%20the%20top%20spot.%20I%20mean%20fish.%20I%20love%20flaky%20white%20meat%20fish.%20I%20have%20come%20to%20the%20conclusion%20that%20I%20don't%20like%20alot%20of%20types%20of%20fish.%20Cod%20is%20fairly%20new%20to%20us.%20It%20has%20now%20become%20one%20of%20my%20favorite%20flaky%20white%20fish,%20the%20first%20is%20Halibut.%20Oh,%20I%20know.%20I've%20used%20%20tilapia,%20orange%20roughy,%20and%20snapper%20too.%20I%20just%20think%20cod%20is%20much%20more%20adaptable%20to%20flavorings,%20a%20blank%20canvas%20if%20you%20will.%3C/p%3E%3Cp%3EThis%20photo%20from%20Sunday%20Suppers%20at%20Lukes%20was%20my%20inspiration%20for%20this%20dinner.%20I%20just%20found%20it%20to%20be%20intoxicating.%20Actually%20all%20of%20his%20food%20is%20remarkable,%20I%20only%20wish%20he%20still%20had%20time%20to%20blog,%20and%20also%20gave%20up%20more%20of%20his%20recipes.%20Like%20the%20talented%20bloggers;%20Natasha%20at%20%205%20Star%20Foodie%20and%20Lazaro%20at%20Lazaro%20Cooks%20.%20I%20just%20don't%20know%20how%20they%20find%20the%20time%20to%20make%20such%20elaborate%20looking%20plates.%20Natasha%20has%20children%20and%20Lazaro%20works%20all%20day.%20Such%20an%20inspiration%20these%20bloggers%20are%20to%20me,%20that%20I%20am%20awed%20by%20them%20on%20every%20visit%20to%20their%20virtual%20kitchen.%3C/p%3E%3Cp%3EIn%20any%20event,%20this%20was%20my%20simple%20attempt%20at%20not%20serving%20a%20protien%20on%20one%20side%20of%20the%20plate%20and%20the%20starch%20thrown%20down%20on%20the%20other%20side.%20I%20do%20intend%20to%20do%20alot%20more%20research%20on%20those%20fancy%20emulsions%20and%20sauces.%3C/p%3E%3Cp%3EThe%20assemblage%20for%20the%20Potato%20Gratin%20with%20Leeks.%3C/p%3E%3Cp%3EFirst%20saute%20leeks%20in%20butter%20until%20soft%20and%20semi%20transluscent.%20Next%20add%20flour%20and%20cook%20a%20few%20minutes%20to%20disperse%20the%20raw%20flour%20taste,%20do%20not%20let%20flour%20brown.%20Next%20add%20milk%20slowly%20while%20wisking%20to%20eliminate%20any%20lumps.%20Season%20with%20salt,%20pepper,%20and%20a%20little%20nutmeg%20if%20you%20prefer.%20Add%20chopped%20chives.%3C/p%3E%3Cp%3ELayer%20very%20thinly%20sliced%20potatoes%20(a%20mandoline%20is%20a%20wonderful%20tool%20to%20do%20this%20with)%20into%20a%20large%20casserole%20dish.%20Alternating%20a%20layer%20of%20potatoes%20with%20some%20of%20the%20bechamel%20sauce.%20Sprinkle%20with%20a%20little%20bit%20of%20smoked%20paprika.%3C/p%3E%3Cp%3EThis%20was%20so%20simple,%20yet%20so%20delightful.%3C/p%3E%3Cp%3EMake%20your%20own%20fresh%20breadcrumbs%20and%20do%20not%20toast%20them.%20I%20added%20some%20simple%20chervil,%20salt%20and%20pepper%20to%20my%20fresh%20breadcrumbs.%20You%20can%20season%20them%20however%20you%20like,%20just%20don't%20go%20overboard.%20Oil%20your%20fish,%20a%20little%20more%20salt%20and%20pepper,%20and%20press%20only%20the%20top%20side%20of%20your%20fish%20into%20the%20breadcrumbs.%20Making%20sure%20to%20press%20down%20hard%20enough%20to%20get%20a%20nice%20coating%20on%20the%20top,%20and%20only%20the%20top.%20In%20a%20medium-high%20skillet,%20heat%202%20tablespoons%20of%20olive%20oil%20and%20placing%20breadcrumb%20side%20down,%20saute%20fish%20for%20about%203%20-%205%20minutes.%20You%20will%20see%20the%20fish%20begin%20to%20turn%20from%20raw%20to%20an%20opaque%20white,%20which%20lets%20you%20knnow%20when%20to%20turn%20it.%20Gently%20turn%20fish%20over%20and%20saute%20another%203%20minutes.%20It%20is%20imperative%20that%20you%20do%20not%20overcook%20the%20fish.%20Then%20you%20loose%20the%20delicateness%20of%20it.%3C/p%3E%3Cp%3EPotatoes%20and%20Leeks%20Gratin%3C/p%3E%3Cp%3Efrom%20Recipe%20Addict%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirectionsIn%20a%20sauce%20pan%20cook%20the%20leeks%20in%20the%20butter%20over%20moderately%20low%20heat,%20stirring,%20until%20it%20is%20softened.%20Stir%20in%20the%20flour%20and%20cook%20the%20roux,%20stirring,%20for%203%20minutes.%20Add%20the%20milk%20in%20a%20stream,%20whisking%20vigorously%20until%20the%20mixture%20is%20thick%20and%20smooth,%20add%20the%20chives,%20salt%20and%20the%20pepper,%20and%20simmer%20the%20sauce%20for%2010%20to%2015%20minutes,%20or%20until%20it%20is%20thickened%20to%20the%20desired%20consistency.%20Layer%20sliced%20potatoes%20in%20a%20buttered%209%20x%2013%20casserole.%20pour%20bechamel%20sauce%20over%20top%20and%20sprinkle%20with%20paprika.%20Cover%20ith%20foil.%20Bake%20in%20350%20degree%20oven%20for%2040%20minutes.%20Uncover%20and%20cook%2020%20minutes%20more,%20or%20until%20top%20is%20golden%20and%20bubbly%3C/p%3E%3Cp%3EServes%204%20to%206.%3C/p%3E%3Cp%3EBread%20Crumb%20Topped%20Cod%3C/p%3E%3Cp%3Efrom%20Recipe%20Addict%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E2%20Cod%20fillets%20cut%20into%20approximately%204%20x%204%20squares%3C/p%3E%3Cp%3E1%20cup%20fresh%20bread%20crumbs%3C/p%3E%3Cp%3E1%20tablespoon%20chervil%3C/p%3E%3Cp%3Esalt%20and%20pepper%3C/p%3E%3Cp%3E1%20tablespoon%20olive%20oil%3C/p%3E%3Cp%3EDirections%3C
