- In a large skillet, heat the butter over medium heat. Add in the onion and celery. Cook, stirring often, till the onion is golden brown, about 10 min.
- Scrape the vegetables and butter into a large bowl. Add in the stuffing and parsley. Stir in sufficient of the stock to moisten the stuffing, about 2 1/2 c.. Season with the poultry seasoning, if you like, and salt and pepper to taste. Use to stuff turkey, or possibly place in a buttered baking dish, drizzle with an additional 1/2 c. stock, cover, and a bake as a side dish.
- Yield: 10 c.:Homemade Poultry Seasoning: Combine 1 tsp. each crumbled dry rosemary, crumbled dry sage, dry thyme, dry marjoram, and celery salt with 1/4 tsp. freshly milled black pepper. Crush together in a mortar and pestle, mini-food processor, or possibly spice grinder.
