%20And%20so,%20Pi(e)%20Day.%20Unfortunately,%20I%20didn%E2%80%99t%20get%20this%20posted%20on%20Pi(e)%20Day%20because%E2%80%A6%20well,%20we%20were%20landscaping%20the%20in-laws%E2%80%99%20flowerbeds%20for%20them,%20and%20by%20the%20time%20we%20got%20home%20and%20everything%20got%20settled,%20with%20the%20addition%20of%20Daylight%20Savings%20Time%20(ugh),%20I%20was%20too%20wiped%20to%20do%20much%20of%20anything%20besides%20watch%20a%20few%20episodes%20of%20Deadwood,%20season%20two.%20But%20I%20was%20determined%20to%20honor%20Pi(e)%20Day,%20and%20even%20with%20more%20than%20one%20pie%20%E2%80%93%20quiche%20and%20a%20pie.%3C/p%3E%3Cp%3EIf%20you%20count%20quiche%20as%20pie%20(it%E2%80%99s%20a%20tart,%20which%20is%20pie%20in%20my%20book),%20then%20there%20are%20two%20incarnations%20of%20the%20treat%20for%20Pi(e)%20Day%202010.%20Mini%20spinach%20quiches%20and%20French%20silk%20pie.%20I%E2%80%99ve%20intended%20to%20make%20the%20mini-quiches%20for%20a%20couple%20of%20weeks%20%E2%80%94%20ask%20the%20husband;%20he%E2%80%99ll%20tell%20you%20%E2%80%94%20for%20his%20breakfasts%20to%20take%20to%20school.%20This%20is%20my%20assurance%20that%20real%20men%20do%20eat%20quiche%20and%20enjoy%20them%20too.%20He%E2%80%99s%20even%20made%20one%20or%20two%20for%20us%20before,%20but%20mine%20are%20better.%20;)%20This%20recipe%20probably%20wouldn%E2%80%99t%20have%20taken%20me%20so%20long%20to%20make%20except%20for%20my%20unexplainable%20aversion%20to%20making%20the%20crusts.%20Mini-quiches%20means%20individual%20crusts,%20and%20I%20wanted%20to%20make%20it%20myself,%20but%20for%20some%20reason%20I%20couldn%E2%80%99t%20wrap%20my%20head%20around%20how%20to%20do%20it%20correctly.%20And%20then%20I%20remembered%20myself,%20and%20figured%20I%E2%80%99d%20just%20wing%20it.%20It%20usually%20works%20out%20in%20the%20end%20anyhow.%3C/p%3E%3Cp%3EI%20took%20inspiration%20from%20this%20recipe%20from%20Michelle%20at%20Dreaming%20of%20Winter%20for%20the%20filling,%20and%20p%C3%A2te%20bris%C3%A9e%20from%20Elise%20at%20(of%20course)%20Simply%20Recipes.%20This%20was%20my%20first%20attempt%20at%20making%20a%20real%20p%C3%A2te%20bris%C3%A9e%20and%20I%E2%80%99ll%20admit%20%E2%80%93%20I%20was%20nervous.%20We%20all%20know%20that%20the%20simplest%20recipes%20are%20the%20ones%20that%20evade%20us%20easily,%20but%20this%20really%20was%20as%20simple%20as%20Elise%20wrote%20it%20out%20to%20be.%20Ingredients%20in%20the%20fo-pro,%20pulse%20to%20combine,%20add%20water,%20pulse%20pulse%20pulse%20%E2%80%93%20then%20shape%20and%20refrigerate%20to%20do%20with%20what%20you%20will%20later.%20Even%20unbaked%20it%20was%20tasty;%20baked,%20even%20better.%20I%20ended%20up%20chilling%20the%20dough%20three%20times%20%E2%80%93%20once%20when%20first%20formed,%20then%20again%20after%20cutting%20the%20dough%20and%20shaping%20again%20into%20tinier%20disks%20to%20roll%20out%20for%20individual%20crusts,%20and%20again%20while%20making%20the%20filling.%20If%20I%20were%20you,%20and%20you%20take%20this%20recipe%20to%20heart,%20then%20just%20roll%20out%20the%20large%20disk%20and%20use%20a%20jumbo%20cutter%20to%20get%20your%20baby%20crusts%20out%20of%20it.%20Much%20simpler,%20and%20you%E2%80%99ll%20get%20to%20keep%20the%20leftover%20dough%20for%20whatever%20you%20like.%3C/p%3E%3Cp%3EMini%20Spinach%20Quiches%3C/p%3E%3Cp%3Eingredients:%3C/p%3E%3Cp%3Edirections:%3C/p%3E%3Cp%3EGrease%20cupcake%20tins%20with%20Baker%E2%80%99s%20Joy%20or%20butter.%20Prepare%20the%20p%C3%A2te%20bris%C3%A9e%20and%20mold%20into%20tins;%20refrigerate%20while%20filling%20is%20prepared.%20Slice%20onion%20finely%20and%20saut%C3%A9%20in%20a%20dry%20pan%20on%20med-low%20heat%20until%20soft%20and%20browned;%20remove%20from%20heat%20and%20set%20aside.%20Steam%20the%20spinach%20however%20you%20choose%20%E2%80%93%20I%20added%20water%20to%20the%20hot%20pan%20and%20wilted%20it,%20then%20set%20it%20aside.%20Combine%20eggs,%20cream,%20salt,%20pepper%20and%20nutmeg%20and%20beat%20until%20thoroughly%20combined,%20then%20mix%20in%20onion.%20Remove%20crusts%20from%20refrigerator%20and%20sprinkle%20shredded%20cheese%20on%20the%20bottom,%20layer%20with%20egg%20mixture%20and%20top%20with%20spinach.%20Bake%20at%20350%C2%B0F%20for%2025-30%20minutes,%20remove%20from%20oven%20and%20let%20cool%202-3%20minutes%20in%20pan%20on%20wire%20rack.%20Remove%20carefully%20and%20enjoy!%20Or%20refrigerate%20to%20eat%20later,%20of%20course.%3C/p%3E%3Cp%3EThese%20little%20babies%20were%20well-received%20by%20the%20intended,%20and%20myself%20too.%20%20I%20was%20pretty%20impressed%20with%20myself,%20if%20I%20do%20say%20so.%3C/p%3E%3Cp%3EFrench%20Silk%20pie%20post%20will%20be%20next%20upcoming,%20as%20soon%20as%20I%20can%20get%20the%20pictures%20from%20his%20iPhone%20(since%20I%20am%20without%20camera%20and%20the%20iPhone%20takes%20the%20best%20pictures%20of%20everything%20in%20the%20house).%3C/p%3E){kind=link}
