- Preheat oven to 350 degrees.
- Mix 1 egg, baking mix, and water [and maple syrup if desired] in a mixing bowl to make the biscuit batter. *** It should be dough-like and pull away from the sides of the bowl when mixed. Temperature & altitude can make a difference in how the dough "acts," so if it is too runny, slowly add a little more baking mix; if it is too thick add a little more water until the right consistency is reached.
- Cook sausage or bacon and onion in a skillet.
- Mix remaining eggs, cilantro, salt, and pepper in a mixing bowl and beat thoroughly.
- When sausage or bacon is done, stir in egg mixture and lightly scramble (you don't want the eggs to get too done - mixture should still be somewhat moist). *** If using any of the optional add-ins, you should mix them with the eggs in this step.
- Spoon a small amount of batter into each cup of a lightly greased muffin pan (or use paper baking cups).
- Spoon egg mixture on top of batter in each cup.
- Bake for 12 - 15 minutes or until a toothpick inserted to the bottom of the muffin comes out clean.
- Top with shredded cheese and bake for an additional 3 - 5 minutes until cheese is melted & slightly crisp.
- Remove from muffin cups using a lightly greased butter knife around the edges and carefully lifting.
- Serve with butter or jam.
