You ain't going to find this breakfast taco at Taco Bell. This is the real deal, like the ones you find in Austin, TX.  You can top this taco with green onions and Pico De Gallo.  Lived in Texas nearly 40 years, breakfast tacos is part of Texas cuisine. In other parts of the country, you may not be aware of breakfast tacos, so I wanted to share this breakfast taco with you. Delicious!  Breakfast Tacos Scrambled Eggs with Potatoes Recipe by Christine Lamb @ Christine's Pantry - 2019 Ingredients: 1 1/12 cups cooked potatoes, diced 4 eggs, beaten 1 small onion, diced 1 green bell pepper, diced salt and pepper 1 tablespoon butter 1 tablespoon olive oil flour tortillas monterey colby jack shredded cheese shredded lettuce, if desired Directions: In skillet heat oil and melt butter over medium heat. Add bell peppers, onions and salt. Stir and cook until tender. Add potatoes, salt and pepper. Gently stir. Add beaten eggs, salt and pepper. Gently stir until eggs are cooked, about 4 to 8 minutes. Place cheese on each flour tortilla, using tablespoon, add egg mixture to each tortilla, top with additional cheese and lettuce, if desired. Top with your favorite toppings. Until next time, Christine
