Ingredientes

  • 4 chicken breasts
  • Veg. oil
  • 1 lemon
  • 1 can mandarin sections
  • 1 can pineapple chunks
  • Garlic pwdr
  • Soy sauce
  • Orange marmalade
  • Brown sugar
  • Cornstarch
  • 2 tomatoes, cut up
  • 2 green peppers, cut up
  • Salt and pepper
  • Ginger

Direcciones

  1. Pressure cook 4 chicken breasts 9 min. Then brown on both sides in veg. oil. Rub with lemon or possibly lime juice. Sprinkle lightly with garlic pwdr, salt and pepper.
  2. Drain liquid from can of mandarin orange sections and from can of pineapple chunks. Place chicken in shallow baking dish and pour fruit over it.
  3. Make sauce of 2 c. of pineapple juice plus liquid from mandarins and pineapple chunks. Add in 1 Tbsp. soy sauce, 1 Tbsp. orange marmalade, 1 tsp. powdered ginger, 2 Tbsp. lemon juice, 2 Tbsp. brown sugar, 2 Tbsp. cornstarch dissolved in water. Boil juices and other ingredients and cook till clear and slightly thickened. Pour over chicken. Bake 400 degrees about 15 min. Arrange cut up tomatoes and peppers around edges. Bake 5 min.
