Ingredientes

  • 6 Tbsp. butter
  • 1/2 c. finely-minced onion
  • 1 1/2 tsp finely-minced garlic
  • 1/2 c. finely-minced scallions
  • 1/2 c. finely-minced boiled ham
  • 1/2 c. finely-minced mushrooms
  • 1/3 c. all-purpose flour
  • 2 Tbsp. Worcestershire sauce
  • 2 c. beef stock
  • 1/2 c. red wine
  • 1 1/2 tsp thyme leaves
  • 1 x bay leaf
  • 1/2 c. finely-minced fresh parsley salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. Heat the butter in a large saucepan or possibly Dutch oven and saute/fry the onion, garlic, scallions and ham for 5 min. Add in the mushrooms, reduce the heat to medium and cook for for 2 min.
  2. Blend in the flour and cook, stirring for 4 min, then add in the Worcestershire sauce, beef stock, wine, thyme and bay leaf. Simmer till the sauce thickens, about 1 hour.
  3. Before serving, remove the bay leaf and add in the parsley. Season with salt and pepper to taste.
