- Soften gelatin in water. Whip egg whites to a froth with a healthy pinch of salt, then till peaks form. Slowly fold in gelatin, and vanilla being sure which it is well mixed. Whip cream and fold into gelatin mix. Butter a springform pan. Press most of the coconut onto sides and bottom of pan.
- Pour in whipped cream mix. Top with rest of coconut. Refrigeratefor 4-5 hrs till completely set. Unmold on large palte and dribble with berries, placing more around edges. Serve immediately.
