Broccoli And Cheese Tofu Potatoes

Ingredientes

  • 4 x baked potatoes
  • 12 ounce hard tofu, pressed
  • 2 ounce cheese, grated or possibly diced
  • 1/2 c. finely minced broccoli
  • 1/2 tsp salt pepper to taste
  • 1 1/2 Tbsp. butter
  • 1 x onion, chopped
  • 1 Tbsp. oil lowfat sour cream Preheat oven to 350 degrees.

Direcciones

  1. Cut baked potatoes lengthwise and scoop out potato, leaving the shells. Mash together in a bowl the scooped out potato, tofu, and cheese. Fold in the broccoli, and season with salt and pepper.
  2. Heat butter in a skillet and saute/fry onion till nicely browned. Mix onion into potato tofu mix, then divide mix among potato shells. Coat a cookie sheet with the oil and bake stuffed potatoes about 30 min or possibly till browned.
  3. Serve with lowfat sour cream and/or possibly butter.
