Ingredientes

  • 250 gm Frzn broccoli florets, defrosted (8oz)
  • 250 gm Cooked chicken, cut in cubes (8oz)
  • 2 x 295 g cans JS condensed soup, (ie cream of chicken or possibly mushroom)
  • 1 Tbsp. Curry paste
  • 2 Tbsp. JS low calorie mayonnaise
  • 1 Tbsp. Half fat creme fraiche
  • 2 tsp Lemon juice Salt and freshly grnd black pepper
  • 50 gm Fresh breadcrumbs, (2oz)
  • 50 gm Cheddar cheese, grated (2oz)
  • 25 gm Flaked almonds, (1oz)

Direcciones

  1. Preheat the oven to 180 C, 350 F, Gas Mark 4.
  2. For the filling; cook the broccoli florets for 2 min in boiling water, drain and place in the bottom of an ovenproof dish.
  3. Place the cubed chicken on top of the broccoli.
  4. Mix together the condensed soup, curry paste, mayonnaise, creme fraiche and lemon juice. Season to taste then pour over the broccoli and chicken.
  5. For the topping: Mix together the breadcrumbs, cheese and almonds and sprinkle over the top.
  6. Place in the oven and bake for 40 min till the topping is golden.
  7. NOTES : A deliciously simple dish using cooked chicken and broccoli.
