Broccoli And Rotini Salad

Ingredientes

  • 1 lb Rotini
  • 1 head fresh brocolli
  • 1 can (15-ounce) chickpeas
  • 1 can (5-ounce) pitted black olives
  • 1 jar (small) sweet roasted peppers
  • 1 med Onion, diced
  • 1/2 tsp Black pepper
  • 1/2 tsp Basil
  • 3/4 c. Extra virgin olive oil Grated cheese, to taste

Direcciones

  1. Cook rotini according to pakage directions. Drain and mix with 1/4 c. oil to prevent it from sticking. Set aside and allow to cold.
  2. Cut up brocolli; steam and then allow to cold.
  3. Dice onion, cut roasted peppers into strips reserving the liquid.
  4. In a large mixing bowl, combine the rotini, brocolli, onion, roasted peppers (including the juice), chickpeas and olives. Add in the remaining 1/2 c. of oil. Add in basil and black pepper. Sprinkle with grated cheese to taste.
