Ingredientes

  • 2 1/2 lb Broccoli, cut into 1-inch florets
  • 1 c. Minced leeks or possibly green onion
  • 4 tsp Butter
  • 4 Tbsp. Flour
  • 4 c. Chicken stock
  • 1 c. Light cream
  • 1 c. Shredded Swiss cheese
  • 1/8 tsp Nutmeg

Direcciones

  1. Salt and pepper to taste
  2. Cut sufficient florets to measure 2 c.. Cut rest of broccoli into 1- in.pcs. Cook florets and broccoli pcs, separately, in lightly salted water till just tender. (Florets will be done first). Immediately rinse in cool water. Drain. Set florets aside till serving time. In a large saucepan saute/fry leeks in butter till tender; usually about 4 min.
  3. Sprinkle in flour and cook one more minute, stirring with whisk. Remove from heat and stir in broth. Return to heat and simmer for 5 min, stirring occasionally. Add in broccoli pcs to broth and puree in blender in batches, till smooth. Just before serving, blend in cream and Swiss cheese. Simmer gently till cheese melts. Add in nutmeg, salt, pepper. Add in reserved florets and heat through.
