Broccoli Cheddar Corn Bread

Ingredientes

  • 3 c. coarsely minced broccoli (about 10 ounce.) may use 1 pkg. frzn
  • 1 c. flour
  • 1 c. corn meal
  • 4 teaspoon baking pwdr
  • 4 lg. Large eggs, beaten lightly
  • 1 c. finely minced onion
  • 2 c. grated extra sharp Cheddar
  • 1/2 c. butter, cut into bits

Direcciones

  1. Blanch fresh broccoli for 2 min. Pat dry. In a bowl whisk together flour, corn meal, baking pwdr and salt and pepper to taste. Add in Large eggs and whisk. Mix till just combined (batter will be thick). Stir in onion, broccoli and Cheddar.
  2. Heat butter in 9 inch square baking pan in preheated 400 degree oven till warm but not smoking. Spoon batter into pan, spreading proportionately and bake in middle of oven for 25 to 30 min or possibly till tester comes out clean.
