Broccoli Florets With Hollandaise Sauce

Ingredientes

  • 500 gm Frzn broccoli florets, (1lb)
  • 1 tsp Lemon juice
  • 1 Tbsp. White wine vinegar
  • 1 Tbsp. Water
  • 1 x Egg yolk
  • 125 gm Unsalted butter, cut into small pcs (4oz) Salt and white pepper

Direcciones

  1. Cook the broccoli according to pack instructions.
  2. Meanwhile, to make the hollandaise sauce, put the lemon juice, vinegar and water into a saucepan and boil till reduced by half.
  3. Leave to cold.
  4. Put the egg yolk and reduced vinegar liquid into a basin over a pan of gently simmering water and whisk till thick.
  5. Gradually add in the butter, a piece at a time, whisking after each addition.
  6. Season to taste and serve over the cooked broccoli.
  7. NOTES : A beautiful, rich buttery sauce that goes particularly well with broccoli and asparagus.
