.%3C/p%3E%3Cp%3EWhen%20I%20came%20back%20from%20Sicily,%20last%20Saturday%20night,%20I%20bought%20a%20head%20of%20broccoli%20and%20few%20other%20things%20to%20be%20able%20to%20survive%20on%20Sunday.%20Half%20of%20it%20went%20into%20a%20reshaped%20classic:%20soupy%20broken%20linguini%20with%20broccoli,%20garlic,%20olive%20oil%20and%20parmesan;%20a%20soul%20food%20of%20my%20childhood%20that%20speaks%20to%20me%20of%20my%20mother%20and%20our%20meal%20together%20when%20I%20wasn%E2%80%99t%20able%20even%20to%20cut%20a%20slice%20of%20bread.%20The%20time%20of%20happy,%20free%20thoughts%20over%20a%20sparkling%20future,%20run%20in%20the%20grass%20with%20my%20neighbour%20friends,%20cry%20over%20a%20scratched%20knee%20after%20a%20fall,%20laughter%20watching%20my%20baby%20sister%20running%20on%20the%20hallway%20with%20her%20puffy%20diaper%20and%20head%20full%20of%20goldie%20locks.%3C/p%3E%3Cp%3EWe%20want%20to%20grow%20up;%20we%20do%20it%20eventually.%20We%20take%20the%20sceptre%20from%20our%20mothers%20preparing%20those%20simple%20meals%20that%20made%20us%20what%20we%20are.%3C/p%3E%3Cp%3EDo%20not%20worry,%20this%20post%20isn%E2%80%99t%20about%20%E2%80%9Cpasta%20e%20broccoli%E2%80%9D%20rather%20risotto%20with%20broccoli.%20Not%20any%20risotto%20though!%20Scavenging%20my%20freezer%20I%20found%20a%20bag%20of%20sweet%20prawns%20to%20use%20and%E2%80%A6some%20Valrhona%20chocolate%20was%20still%20lying%20around.%3C/p%3E%3Cp%3EIs%20that%20enough%20to%20entice%20your%20curiosity?%20Come%20on;%20say%20yes%E2%80%A6%20you%20won%E2%80%99t%20be%20disappointed,%20promised!%3C/p%3E%3Cp%3EHere%20I%20give%20you%20my:%3C/p%3E%3Cp%3ERisotto%20with%20broccoli,%20poached%20prawns,%20roasted%20sesame%20seeds%20oil%20and%20dark%20chocolate%20shavings%3C/p%3E%3Cp%3EIngredients%20(make%202%20servings):%3C/p%3E%3Cp%3Esalt%20and%20pepper.%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPrepare%20the%20broccoli%20by%20cutting%20the%20florets%20from%20the%20stalk,%20peel%20the%20latter%20and%20chop%20it%20in%20medium%20dices%20(keep%20the%20peelings).%20Clean%20the%20prawns%20from%20the%20shell%20and%20head%20that%20you%20will%20put%20in%20a%20small%20pot%20with%20some%20olive%20oil.%20Set%20aside%20half%20of%20the%20prawns%20and%20slice%20or%20coarsely%20chop%20the%20other%20half.%3C/p%3E%3Cp%3EOver%20medium%20fire%20gently%20fry%20the%20prawns%20shells%20till%20they%20turn%20bright%20orange,%20add%20then%20the%20vegetable%20stock%20to%20them%20and%20the%20peeling%20from%20the%20broccoli%20stalk.%20Let%20the%20broth%20simmer%20for%2020%20minutes%20or%20so.%20Keep%20the%20broth%20over%20very%20low%20flame.%3C/p%3E%3Cp%3EIn%20a%20medium%20sized%20pan%20put%20a%20little%20olive%20oil%20and%20fry%20in%20it%20the%20shrimp%20paste,%20the%20garlic%20and%20the%20broccoli%20stalk.%20Add%20the%20rice%20and%20stir%20to%20coat%20the%20grains%20with%20the%20olive%20oil.%20Toast%20the%20rice%20without%20stopping%20stirring%20it%20for%20a%20few%20minutes%20and%20then%20start%20adding%20the%20infused%20stock%20a%20little%20at%20a%20time%20enough%20to%20barely%20cover%20the%20rice.%3C/p%3E%3Cp%3ELet%20the%20risotto%20cook%20over%20medium%20fire%20adding%20stock%20until%20it%20will%20be%20cooked%20al-dente.%20If%20you%20should%20run%20out%20of%20stock,%20simply%20use%20warm%20water.%20Toward%20the%20end,%20add%20the%20chopped%20prawns%20and%20season%20with%20salt%20and%20freshly%20ground%20black%20pepper.%3C/p%3E%3Cp%3EWhile%20the%20rice%20is%20cooking%20blanch%20the%20florets%20and%20the%20entire%20prawns%20in%20the%20infused%20vegetable%20stock%20and%20keep%20warm.%3C/p%3E%3Cp%3ETo%20serve,%20dish%20the%20rice,%20decorate%20with%20few%20florets%20and%20the%20poached%20prawns;%20drizzle%20a%20little%20sesame%20oil%20here%20and%20there,%20shave%20some%20chocolate%20over%20the%20rice%20and%20enjoy!%20Serve%20the%20rest%20of%20the%20florets%20as%20side%20with%20a%20drizzle%20of%20sesame%20oil%20and%20a%20sprinkle%20of%20Kosher%20salt.%3C/p%3E%3Cp%3EThe%20risotto%20was%20savory%20and%20pleasantly%20peppery,%20the%20broccoli%20florets%20added%20a%20little%20sweetness%20and%20enough%20water%20to%20clean%20the%20palate,%20the%20prawns%20were%20a%20pleasant%20contrasting%20texture%20with%20their%20springy%20sweet%20flesh;%20every%20now%20and%20then%20you%20got%20another%20rich%20deep%20sweetness,%20that%20of%20the%20chocolate%20and%20the%20heady%20aroma%20from%20the%20sesame%20oil%20kept%20the%20taste-buds%20awake.%3C/p%3E%3Cp%3EAll%20together%20it%20was%20a%20rather%20satisfying%20meal%20indeed!%3C/p%3E){kind=link}
