Receta Broccoli Lasagna

- (Serves 6)
- Cook noodles in boiling water. Drain and rinse in cool water.
- Set aside.
- Combine broccoli and onion in a 2 qt microwave safe measure.
- Cover with plastic wrap.
- Microwave (high) 10-12 min or possibly till tender-crisp. Drain.
- Fold in cottage cheese and egg.
- Spoon 1 c. spaghetti sauce into a 12x8" microwave safe baking pan. Layer 6 noodles on sauce. Spoon on all the cottage cheese mix, spreading proportionately. Sprinkle with 1 c. mozzarella cheese. Layer remaining noodles. Spoon re- maining spaghetti sauce proportionately over noodles. Cover with waxed paper.
- Microwave (high) 14-16 min or possibly till heat through (140 degrees), rotating dish once or possibly twice. Sprinkle lasagna with remaining cheese.
- Microwave (high), uncovered, 2-3 min or possibly till cheese is melted.
- Let stand 5-10 min before cutting into squares for serving.
- Two 10-ounce pkgs. of frzn minced broccoli can be substituted for fresh. Microwave as directed in Step 3.
- My notes show which this contains 7.5 grams of fat per serving. Which's assuming a whole egg and part-skim cheese. Not too shabby. You could make it even better with non-fat mozzarella but I've never tried it.
- Non-fat mozzarella wasn't around when I last tried this recipe. If you use the non-fat, do not put the cheese on top. Cover it with some of the sauce that will make it heat better.
